My NRGY Healthier Oatmeal Cookies (as seen on SWEET ON VEG)

Hey friends!!! So of course Oatmeal cookies aren’t “Mexican” but I still wanted to share this easy yummy recipe…

NRGY’S HEALTHIER OATMEAL COOKIES WITH RAW CASHEW FROSTING

Ingredients:
1 mashed banana
3/4 cup of apple sauce
1 cup of date syrup (about 15-20 soaked dates blended with water to create a syrup/paste)
1 tablespoon of vanilla extract
1 3/4 cup of wholewheat flour
3 cups of oats (rolled oats preferred)
3/4 teaspoon of baking soda
3/4 teaspoon of baking powder
1 tablespoon of cinnamon
1 cup of raisins
1/2 cup of chopped walnuts (optional)
3 cookie sheets or parchment paper

Directions:
- Preheat oven to 350 degrees.
- Coat cookie sheets.
- In a blender or food processor, whip together the soaked dates with 1 tablespoon of water (add more if needed).
- By hand or with an electric mixer, cream together the banana, apple sauce, date syrup & vanilla until well blended.
- In a separate bowl combine the flour, oats, baking soda, baking powder & cinnamon.
- Add the dry mix to the wet mixture and mix until well blended and smooth.
- Stir in the walnuts & raisins until thoroughly combined.
- Use a tablespoon to scoop up some dough and lightly press the cookies to form 1/3 inch thick rounds.
- Sprinkle whole flaxseeds on top.
- Bake until the cookies are golden brown (12-15 minutes).
- Remove from the oven and allow the cookies to firm up for a few minutes while still on the cookie sheet.

Cashew Frosting:
1 cup of raw cashews soaked overnight
1 cup of dates soaked for 30 minutes
1 tablespoon of vanilla extract
water

In a high speed blender, blend all ingredients together until you have a smooth consistency. May add a little water if needed. Refrigerate for 1/2 an hour for a harder consistency or serve as is.
