Vegan a la…. RAW?

Raw Cacao Drink

 

So a few weeks ago I took on the “challenge” to go completely Raw. A raw/living-foods vegan is someone who strictly eats foods that have not been cooked above 115 degrees Fahrenheit. These foods include fresh fruits & vegetables, fruit & vegetable juices, dehydrated fruits & vegetables, nuts, seeds, sea vegetables, grains, legumes, sprouts and plant oils.  It wasn’t as difficult as I had expected, although, I must I admit I really missed my Rice & Beans. I felt very cleansed & full of eNeRGY! Overall, it was a great “experiment”– it reminded me how wonderful fresh foods, especially freshly picked foods are. Since then I have integrated more RAW meals into my day & feel amazing! Below are some ideas of things you can try if you want to give this Vegan Raw thing a try. Raw Vegan Border Wrap from Cru made with pumpkinseed chorizo….. side of Flaxseed & Pumpkinseeds tostada & salsa……SOOOOO GOOD!

Stuffed Red Bell Pepper with Lettuce, Carrots, jalapenos, sesame seeds, Kelp Noodles & a cashew enchiloso spread. YUM!

RAW CHALUPAS!

Avocados 4rm my garden, tomatoes, jalapenos, Cilantro 4rm my garden, sesame seeds, sunflower seeds & onion tossed with sea salt & lemon 4rm my garden ……..YUM!

 

 

Raw Zucchini “No Bean” Hummus

I know hummus isn’t a mexican dish but this is such an easy & yummy recipe so I had to included. Enjoy!

2 zucchini, peele & chopped
3/4 raw tahini
1/2 cup fresh lemon juice
1/4 cup olive oil
4 cloves garlic, peeled
2 1/2 teaspoons sea salt
1/2 tablespoon ground cumin

Combine all ingredients & blend

*Takes a matter of minutes & it’s super yummy.

ps: the salt it asks for was a little too much for my liking so i only put 1 teaspoon & still came out great!

*More on the Raw Cacao Nut Shake: I put the cacao beans & raw nuts into the food processor, I added Raw Agave nectar & Water…. Then I put the mix in the Blender for a few seconds, drained it & enjoyed …. Took only a few minutes to make

The stuff that did not drain I rolled into lil balls & they are sitting in the fridge for me to enjoy later. :)

ps: The Raw Agave & Raw Nuts I got from Wholefoods.
I bought the cacao beans 4rm El Mercadito in East Los bcuz they come 4rm Mexico & are way cheaper than the ones at the health food stores.
