Hey friends!! First of all, I want to apologize for sharing this so late, I had a hectic day & got back from Danza ensayo a bit late, but lets focus on the positive … Now, I finally get a chance to share my DAY 1 with all of you.
I hope you all had a wonderful Day 1 of the VeganChicanoDoctor’s Journey to Health, & are feeling excited about the journey ahead. I’ve been feeling very eNeRGetic & in a beautiful positive mood, despite the “day to day stress”. Well, enough chit chat, here is my FIRST video post EVER, where I share a little bit about a very simple yummy salad I made today!! ENJOY!! (Scroll down for recipe)
NRGY Summer Salad: (these are the things I had available, but if you dislike some of the ingredients or want to add your favorite veggie don’t hesitate to change it up)
- 1 Cup of oyster mushrooms (cleaned & shredded)
-2 heads of corn (cut corn off the cob)
-3 cups of lettuce (chopped)
-2 cups of spinach (chopped)
-3 carrots (chopped)
-1/2 large red onion (chopped)
-1 large red bell pepper (chopped)
-2 cups of chopped cilantro or parsley (chopped)
-1 medium cucumber (chopped)
-2 celery sticks (chopped0
-1 large jalapeno (chopped)
-3 large tomatoes (chopped)
-Juice of 2-3 large lemons (to taste)
-Salt or Kelp Seasoning to taste
- Pepper to taste
- Chili powder to taste ( I love spicy food!)
-Chop up all your veggies & throw them in a bowl, pour the lemon juice & add seasoning. If using the marinated oyster mushrooms throw them in as well, toss everything & serve!! Enjoy
