Hey friends!! So today I made an NRGY Raw Summer Soup for myself and the VEGAN CHICANO DOCTOR & it came out really yummy! I had my dad, Chef Juan Gonzalez, try it & his only criticism was, “You should have made some raw tortilla chips to go along with it.” hehe… Good point!
Either way, it’s yummy & if you’re not doing the RAW thing, but still want a yummy fresh meal for these SUPER warm days this is a great one, and of course you can pair it with some of my NRGY Homemade Tortilla Chips(click on link & scroll to “Healthy Nachos” for Tortilla Chip recipe) or your favorite chips… ENJOY! NRGY RAW SUMMER SOUP:
-2-4 medium Carrots (chopped or juiced before hand)
-1 bunch of cilantro
-1 large jalapeno (chopped)
-1/2 large onion
-2 pieces of fresh garlic
-2 heads of corn (cut kernels off the cob)
-1 large red bell pepper (chopped)
- 1 large tomato (chopped)
-Juice of 2 large lemons
-1/2 cup of water (If using juice from carrots omit the water)
-1 tablespoon of Braggs Aminos (if available)
-1tablespoon of your favorite herb (e.g. rosemary, basil, etc)
-Salt & pepper to taste
-If you choose to juice the carrots, then juice them first.
-In a food processor or high-speed blender, process all the veggies until you have a chunky soup consistency.
-Slowly add water or carrot juice during the processing.
-Add braggs, lemon juice, herbs, salt & pepper and process a few more seconds.
-Chill for 15 minutes or serve as is… ENJOY!!
