Day 3 of “Journey to Health”: Raw Hummus (2 different options)

Hey friends!! I hope your 3rd day of the VEGAN CHICANO DOCTOR’sJOURNEY TO HEALTH” is going great. I have to admit, today was a tough day for me. I didn’t sleep very well & as a result I’ve been a little rude with others, SORRY!! :/… But after I had this yummy Raw Hummus I felt a lot better, I think my body was graving something “heavy”. I had only had a version of my NRGY RED JUICE and some fruit so I wanted something a little more hardy.

I have to share, that I’ve been a little scared to try making a Raw Hummus with sprouts. The last time I tried it, it came out terrible, but I gathered some courage & gave it another try, and this time it came out great. Btw, I know hummus isn’t Mexican, but to me this is a very Mexican take on the dish. My dad’s, (CHEF JUAN GONZALEZ) family used to grow fields of garbanzos in rural Michoacan, so I feel a connection to the garbanzo. Anyway, here is the recipe I made today & one I made in the past incase you’re not into sprouting. I hope you enjoy it!! 

 

NRGY RAW SPROUTED BLACK BEAN & GARBANZO HUMMUS:

Ingredients:

- 2 cups of sprouted Garbanzo Beans (soak for 1 night, sprout for 2-3 days)

-1 cup of sprouted Black Beans(soak for 1 night, sprout for 2-3 days)

-1 large bell pepper (chopped)

-2 pieces of garlic

-16 oz (the size of the jar) of RAW TAHINI (If you’re not a 100% Raw purist, I found Organic Tahini at the 99 cent store a few weeks ago!!)

- Juice of 4 large lemons

-1 Bunch of cilantro

-1 large jalapeno

- salt to taste

-(I added some cumin, pepper & basil to mine)

Directions:

Soak the Garbanzos & Black Beans over night & sprout for 2-3 days. (Both amazing protein sources for those obsessed with protein intake)

- OPTIONAL: Boil a pot with water, remove it from the heat & pour in your beans & allow them to sit for less than a minute. When I don’t do this the hummus tastes terrible, so it’s up to you if you want to try this step.

- Blend everything in your food processor, high-speed blender, Vitamix, Blentec, etc untill smooth.

- Serve with Sliced Cucumber, dehydrated chips, carrots, celery sticks or add it to a raw wrap! YUM! Enjoy :)

Had some leftover salad from DAY 1 so paired it with the hummus! YUM!

 

*I didn’t add any Olive Oil because the Tahini already has plenty of fat & oil, but if you want to add some don’t add more than 2 tablespoons.

 

If you’re not into sprouting try this recipe:

Ingredients:

-2 large zucchinis

-1/2 cup soaked sesame seeds

- Juice from 2 large lemons

-1.5 cups of Raw Tahini

-1 jalapeno

-1 tsp cumin

- Salt to taste

- Blend everything in your food processor, high-speed blender, Vitamix, Blentec, etc

- Serve with Sliced Cucumber, dehydrated chips, carrots, celery sticks or add it to a raw wrap! YUM! Enjoy :)
