NRGY’s Amaranth with Fresh Corn & Chipotle Field Roast Sausage

Hey friends!! I want to share a yummy dish I made recently, amaranth with fresh corn, oats, onion, Mexican Chipotle Field Roast Sausage & jalapenos. Very filling & spicy! Amaranth is high in protein, calcium & the essential amino acid, lysine. It has been cultivated for thousands of years by native people in North & South America, the Aztec people called it huautli. It is a delicious alternative to rice, quinoa and other grains.

Someone had given me some Field Roast Sausages, and although I usually don’t eat processed vegan meats I also don’t like wasting food, so I decided to pair it with my amaranth. It was a delicious pairing! Since the sausages do have quite a bit of fat & sodium I didn’t use any oil or salt, & it was still very flavorful. Here’s the recipe, enjoy!

NRGY’s Amaranth, with Fresh Corn & Chipotle Field Roast: (4-5 servings)

Ingredients:

-2 vegan sausage links (since they have a lot of oil I like to rinse them or dab them down with a towel)

-1/2 a cup of Amaranth and 1.5 cups of water boiling

- 1/2 a cup of oats and 1 cup of water for boiling

-1-2 heads of fresh corn

-1 large onion chopped

-2 cloves of garlic

-1 large jalapeno chopped (optional)

-top with fresh tomato & cilantro

 

Directions:

-Cook the amaranth in water for 8-10 minutes. Don’t cover it, if you do it becomes sticky

-Cook the oats separate from the amaranth for 12-15 minutes.Untill soft.

-Cook the onion, garlic, jalapenos, sausage & corn on  pan (no need for oil), if it sticks add a little bit of water.

-Add the amaranth & oats as soon as they’re done & stir together for a few minutes.

-Top with fresh tomato, cilantro & avocado. Pair with a big green salad.
